Gluing tofu and ground meat : AskCulinary

I need to make Asian dish known as yong tau foo. South east Asia model, which serve in a transparent red meat/hen broth. Basically, it is a tofu, make a hollow, fill with ground meat/fish paste and then steam it. I did make this ahead of, however the meat filling regularly falling off from the tofu.

Any trick or tricks to save you that?
